Soybean Sprout & Persimmon Salad

In this recipe sturdy, crunchy sprouts are combined with the Fuyu variety of persimmons, which have exceptional flavor when ripe.

Soybean Sprout & Persimmon Salad

Ingredients

  • 6 ounces soybean sprouts, or bean sprout of your choice
  • 1 large ripe Fuyu persimmon, peeled and sliced
  • 2 tablespoons golden raisins
  • Juice of 2 lemons
  • 2 tablespoons finely chopped fresh cilantro flakes
  • 1 teaspoon chile flakes
  • Salt

Directions

Gently toss all the ingredients and season to taste with salt.  Serve chilled.
