Gluten-Free Chocolate Pixies

Part brownie, part cookie, these Chocolate Pixies taste as good as they look!

Gluten-Free Chocolate Pixies

Ingredients

    Dry Ingredients
  • 1 1/2 cups white rice flour
  • 1/2 cup cornstarch
  • 2 tablespoons sweet rice flour
  • 1/4 teaspoon xanthan gum
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Wet Ingredients
  • 1/4 cup (1/2 stick) butter, melted
  • 4 squares (4 ounces) unsweetened chocolate
  • 2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup chopped walnuts (optional
  • Confectioner's Sugar, for rolling

Directions

In a medium bowl, whisk together dry ingredients.

In a microwave safe bowl, melt chocolate. (Microwave chocolate for 20 seconds, then remove the bowl from the microwave and stir.  Repeat until completely melted.)  In a large bowl, combine melted chocolate and melted butter, stirring well, about 30 seconds.  Add sugar; blend on medium speed, 45 seconds.  Add eggs; mix on medium speed, 30 seconds.  Scrape down the sides of the bowl.  Add dry ingredients; mix on medium speed, 30 seconds.  Scrape down the sides of the bowl.  Add dry ingredients; mix on medium speed, 45 seconds.  Add nuts, if using, and stir to combine. The dough will look like a thick brownie batter.

Cover dough with plastic wrap and chill in the refrigerator for 4 hours or overnight.

Preheat oven to 350 degrees.  Line 2 baking sheets with parchment paper.

Roll dough into balls around 1 tablespoon each.

Place confectioners’ sugar in a shallow dish and roll dough balls in sugar.  Place dough balls on prepared baking sheets, placing about 3 inches apart.  Return one sheet of cookies to the refrigerator while the first sheet bakes.  It is important to keep dough chilled.

Bake first sheet of cookies for 10 to 12 minutes or until cookies have a cracked appearance and are very aromatic.

Remove cookie sheet from oven and place on wire racks to cool, 3 to 5 minutes.  Transfer cookies directly onto racks to cool completely.  While first sheet is cooling, bake the second sheet of cookies.

Makes 4 dozen cookies.
