Gluten-Free Classic Chocolate Cake

Gluten-Free Classic Chocolate Cake

Ingredients

    Vegetable shortening, for pan
    Cocoa powder, for pan
    Dry Ingredients
  • 1 cup white rice flour
  • 1/2 cup cornstarch
  • 1/4 cup sweet rice flour
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 cups granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum
  • Wet Ingredients
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup very hot water
  • For Chocolate Buttercream:
    Dry Ingredients:
  • 4 cups (1 pound) confectioner's sugar
  • 3/4 cup Dutch process cocoa powder
  • 1/2 teaspoon salt
  • Wet Ingredients:
  • 1 cup (2 sticks) butter, softened
  • 1/4 cup milk
  • 2 teaspoons vanilla extract

Directions

Preheat oven to 350 degrees.  Grease and sprinkle cocoa powder on two 9-inch round cake pans or one 9x13-inch pan, or line 24 muffin cups with paper liners.

In a large bowl, whisk together dry ingredients.

Add eggs, milk, oil, and vanilla.  Using an electric mixer, beat for 2 minutes at medium speed.  Turn mixer to low.  Add hot water and mix for an additional minute.

Pour batter into prepared pans.  Bake.  For two 9-inch round pans, bake for 30 to 35 minutes.  For a 9x13-inch pan, bake for 45 minutes.  For cupcakes, bake for 18 to 20 minutes.  A tester inserted into the center of any of the cakes should come out clean.

Remove pan(s) from the oven.  Allow cake(s) to cool for 10 minutes in the pan.  Turn out onto a wire rack to cool completely.

Frost with Basic Chocolate Buttercream:

in a medium bowl, whisk together dry ingredients

In a large bowl, cream butter until light and fluffy, about 30 seconds. (Use high speed on a handheld or stand mixer.)  Add dry ingredients and cream together for 10 seconds.  Pour milk and vanilla evenly over the icing.  Blend, on low speed, for 45 seconds or until smooth and creamy.

Makes 3 cups of icing
