Perfect Pasta, the Piatto Unico Way

Toni Lydecker shares her best tips for the perfect pasta in an excerpt from her upcoming cookbook, Piatto Unico.  

"Although there are exceptions, pasta is normally eaten in Italy as a primo, not a main course. But, day to day,  lots of people eat a single course piatto unico for lunch or dinner, and pasta is perhaps the top choice. This trend is evident in many restaurants in Italy, where it’s now accepted to order just a plate of pasta, especially at lunchtime.
